If you live where we live you probably have zucchini coming out of your ears by now... or in the near future.
This morning I whipped up 3 loaves of this recipe and it was absolutely delicious! My mom has family in town and I thought it would be a delightful homemade snack for them all, Washington style :)
The zucchini bread is gluten-free and totally moist, soft, and yummy.
I saved a loaf for my own family and they devoured it.
Also, I didn't use sugar, I subbed honey. The recipe calls for a cup of brown sugar and I used 1/2 - 3/4 cup local honey instead (cause remember, I don't really measure).
